Chocolate Glaze

I discovered this recipe a few months ago and it was such a big hit as a delicious alternative for a cake topping. You can ice the sides or leave them plain.

1 cup semisweet chocolate chips
2 tbsp hot strong coffee
1 tbsp brandy
3 tbsp soft butter

Using a double boiler or a small bowl over hot water, melt the chocolate chips on the coffee. Remove from heat and stir in the brandy. Add butter gradually, blending until smooth. Have your cake ready and iced on the side. Spread the glaze over the top of the cake. Allow some of it to dribble down the side. Let stand at room temperature to set. Decorate the top with chocolate shavings, raspberries, or icing sugar from a shaker.
