3 Step Mini - Cheesecakes
2 - 8 oz (500 g) packages cream cheese, softened
1/2 cup (125 mL) sugar
1/2 teaspoon (3 mL) vanilla
2 eggs
1 1/2 cups (375 mL) graham crumbs
1/4 cup (60 mL) margerine or butter, melted
12 large muffin cups
Combine margerine or butter and graham crumbs. Place approximately 1 tablespoon (15 mL) of mixture into each of 12 muffin cups and press down. Mix cream cheese, sugar and vanilla with electric mixer on medium speed until well blended. Add eggs and mix until blended. Pour batter evenly into muffin cups. Bake at 350 degrees until centres are almost set, approximately 15 minutes. Refrigerate 3 hours to set. Freezing: Excellent.
