Peanut Butter Cookies

This recipe from The Canadian Living Cookbook is delicious.
At my house, I usually double the recipe because they disappear so quickly.

½ cup butter
1 cup packed brown sugar
¾ cup peanut butter (crunchy or smooth)
1 egg
1 tsp vanilla
1 ½ cups all purpose flour
1 ½ tsp baking powder
¼ tsp baking soda
pinch of salt

In large bowl, cream together butter and sugar. Add peanut butter, creaming thoroughly. Beat in egg and vanilla. In a separate bowl, combine flour, baking powder, soda and salt. Blend into creaming mixture. Shape into small balls and place on lightly greased baking sheets. Flatten slightly with a floured fork. Bake in 350 degree oven for 8 minutes or until lightly browned. Cool on baking sheet for a few minutes, then remove to racks to cool completely. Makes about 40 cookies.
