Glazed Strawberry Pie
1 quart Strawberries
1/2 cup sugar
1/2 cup water
1/4 cup cornstarch
1/2 tsp. vanilla extract
1/4 cup sliced toasted almonds
Wash and hull the berries. Puree 1 cup of berries and set aside. Put the rest into a baked pie shell* with the stem sides down. Cover the bottom.
Combine sugar, water and pureed berries. cook over medium heat until mixture begins to boil. Add vanilla and simmer for 5 minutes. When cool, pour over berries in the pie shell and sprinkle with the almonds. Chill for 3-4 hours
and with whipped cream, ice cream or plain.
